- 3 cups shredded chicken (store bought rotisserie chicken works great)
- 3 tablespoons Smokey BBQ Ketchup
- 4 ciabatta rolls
- Hot Pink Mayonnaise
- Red onion thinly sliced
- Combine the chicken and ketchup in a medium bowl and mix well. Toast the ciabatta rolls and spread with hot pink mayonnaise.
- Divide the chicken between each roll and top with some red onion and arugula.
