Raw Chai Turmeric Truffles

Ingredients:

  • ½ cup raw cashew nuts
  • ½ cup raw walnuts
  • ¼ cup raw almonds
  • ½ cup medjool dates
  • ¼ + ⅛ t ground turmeric
  • 1 pinch sea salt
  • 1 T chia seeds
  • ½ cup shredded coconut
  • ½ t ground turmeric


Instructions:

In a food processor, process the nuts until crumbly and textured. Add the dates, chai, ¼ + ⅛ t turmeric, chia seeds and salt. Process until the mixture evenly combined but still has texture (about 30 seconds to 1 minute).

Mix the coconut with the ½ t turmeric in a large dish or bowl. Roll the mixture into balls approximately 1-inch in diameter (a rounded tablespoon). Roll each ball into the coconut turmeric blend to cover completely. Place in the fridge to set for at least two hours before serving. Store in the fridge for up to 1 week or in the freezer for 2 months.
