Seared Scallops with Bacon Marmalade

  1. Season scallops with salt and pepper.
  2. Add butter and oil to a 12-inch sauté pan on high heat.
  3. Once the fat begins to smoke, gently add the scallops.
  4. Sear scallops for 1 ½ minutes in each side.
  5. Serve with a dollop of bacon marmalade on top of each scallop
